The wine list at Bridges is never finished. Led by sommelier Leo Ganancia, the team is constantly searching through small producers, unfamiliar regions, and varieties that rarely find their way onto a restaurant list. Every bottle earns its place through what it does in the glass rather than what its label says. The result is a collection that moves between the celebrated and the completely unknown, chosen for guests who arrive with genuine curiosity and leave having discovered something they did not expect to find.

The Approach

Chosen with intention

Every bottle is selected for how it came to exist as much as how it tastes. We look for producers who treat the land as something to be sustained, whose decisions in the vineyard are guided by the soil and the season rather than the market. The list changes as new discoveries arrive and vintages run out. That impermanence is part of what makes it worth exploring.

Leo Ganancia has shaped the wine programme at Bridges with a philosophy that runs parallel to the kitchen’s own — local where possible, always seasonal in spirit, and guided by a deep respect for producers who work with the land rather than against it.

His list moves between the grand and the intimate, between wines you already know and wines that will change what you thought you knew. He and the team are always ready to guide you — to exactly what you’re looking for, or to something you weren’t looking for at all.

Dutch wines

Wines from Dutch soil

At Bridges, Dutch wines earn their place on the same terms as any other bottle on the list: through genuine quality and character. Over the last decade the quality of Dutch wines has transformed quietly and significantly, and we have chosen to be part of that story.

Supporting local producers also reflects how we believe a restaurant should operate. It reduces our ecological footprint, shortens the distance between land and table, and builds real relationships with the growers behind each bottle.

On the list you will find wines from Apostelhoeve, the oldest winery in the Netherlands, planted in 1970 on the slopes above Maastricht and producing wines of real elegance. You will also find the award-winning Betuws Wijndomein, an estate whose wines consistently surprise guests who expect less from a Dutch bottle. The list is subject to change as the collection continues to evolve.

Every tasting menu at Bridges has a pairing built for it, selected by Leo each week to follow whatever the kitchen is serving. Each glass is chosen to do something specific to the dish it accompanies. If you are joining us for the Menu du Chef or the Vegetable Menu, we would quietly recommend letting Leo take you through it.
